Oreo Cheesecake Cupcakes!!!!

I realized some time ago, that when I feel sad or discouraged all I have to do is be creative and make something or work on a craft and it snaps me right out of my bad mood. I've been having serious "withdrawals" not being able to scrapbook lately. We packed most of our belongings up a couple weeks ago in hopes of moving to Jamaica soon. As the days drift by and we still haven't received the long awaited phone call that our paperwork is approved...I miss my stolen minutes to myself that I would sit and scrap for a few minutes.

Any way...enough of the melodrama! Today I decided to be creative in my cooking. I "invented" oreo cheesecake cupcakes. Pretty simple and very, very yummy! If I do say so myself! I crushed a package of oreos (saving a few for garnish) then I blended them with an 8 oz package of cream cheese. I then set that mixture in the freezer. I mixed up a white cake mix, poured into cupcakes pans and then dropped balls of the, now firm, oreo mixture. After they were baked and cooled I frosted them with cool whip and then sprinkled oreo crumbs on top! They are now waiting in the fridge for the monthly bday party after church tonight!
