Princess Alexis loves brownies
so we came up with her "everything but the..." cupcakes
I've made cookie dough cupcakes for several years now...they're amazing!
1st Step
cookie dough recipe:
1 cup butter (softened)
3/4 cup sugar
3/4 cup brown sugar
4 Tablespoon milk
1 Tablespoon vanilla
2 1/2 cups all purpose flour
1 cup mini chocolate chips
(white sugar is expensive in Jamaica, so I use only brown sugar)
roll into small balls and freeze overnight
2nd Step
I made a regular chocolate cake mix {whisper} from a box!
Mix the cake batter up...go ahead take a taste....I won't tell the kids!
3rd Step
Here is where we got creative
I had Alexis mix up some brownie batter
and we stirred in a cup of chocolate chips. Mmmmmm.
4th Step
divide the {lick fingers} cake batter into muffin tins
put a "dollop" of brownie batter in on the top of each cupcake
place one frozen solid cookie dough ball on the top of each one
bake {in a cozy warm oven}
until a toothpick inserted into just the cake batter comes out clean
I tried a different frosting recipe this time.
As you can see, my large crystal brown suga' doesn't dissolve very well.
I usually just use powdered sugar in my frosting.
I was not happy with how this turned out so I won't share the recipe.
The princesses loved it though, they thought it tasted like cookie dough frosting.
I keep mine in the ice box fridge so the ants don't get into it.
These are so much yummier cold.
