My Southern Mother-In-Law is visiting me and besides spoiling her grand babies and making me fat with her divine cooking we've really enjoyed each others company. She made a table full of tempting deserts for our church's Mother's Luncheon. More sweeties than most of my ladies have ever seen in one place! I chose some of the favorite recipes to share with you wonderful people.
Cherry Cheesecake BarsFrom the kitchen of Mrs. Bonnie
2 cups all purpose flour
1 1/2 cups LONG-cooking oats
1/4 brown sugar
1 cup butter, softened
12 ounce pkg white chocolate chips
8 ounce cream cheese, softened
14 ounce can of sweetened condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
14 ounce can of pie filling (we picked cherry)
2 Tablespoon cornstarch
Combine flour, oats and brown sugar in a large bowl. Cut in butter. Add chocolate chips. Reserve 2 1/ 2 cups of crumb mixture for topping. Press into a greased 13x9 baking pan.
Whip your cream cheese in a large bowl until creamy. Add condensed milk, lemon juice and vanilla. When it is smooth pour mixture over crust. Combine your cornstarch and pie filling than spoon over cream cheese. Top it off by sprinkling on the reserved crumb mixture.
Bake at 375 for 35 to 40 minutes, until golden. After it's cool cut it into bars. We think it's best when kept in the fridge.

OHHHHHH! Those look so good! Cherry cheesecake is right down my alley. Hopefully, I can find some white chocolate chips and try that soon!
