Kinda-Cadbury-Creme-Eggs

One thing I miss about America is the candy aisle at Wal-Mart.  I know..sad isn't it?  That food would have such a hold on my being?  Well, I'm just being honest.  I especially love it during the holidays, which to be truthful there is almost always some holiday to celebrate in the retail world.

I would truly love to have some chocolate bunnies to give my Princesses, but here on the Island that is just a dream.  Last year I made my own version of Reese's peanut butter eggs.  They were a huge hit and we've made them several times since then.

This year I decided to try another American favorite....Cadbury Creme Eggs.

I actually found a recipe on line, but I had to tweak it a little.

My Kinda-Cadbury-Creme-Eggs
1/2 cup light corn syrup
1/4 cup butter (room temp)
3 cup powdered sugar
1/4 t. salt (optional...I didn't add this)
12 ounces chocolate

Corn syrup is hard to find on the Island and pretty pricey.  Soooo....I made my own.  Didn't know you could do that?  It's pretty easy.

Homemade Light Corn Syrup Recipe
2 cups sugar
3/4 cup water
1/4 t. creme of tarter
dash of salt
Stir together over medium heat.  
When it boils you cover it for 3 minutes 
(this is supposed to cut down on the crystalizing).  
Then remove lid and continuing cooking
 on medium heat till it reaches "soft ball" stage.

Okey Dokey Smokey, back to the eggs.  Mix together your corn syrup and butter.  Then mix in your powdered sugar.  The recipe I was using said that it will be extremely sticky at this point and the cook kept putting hers in the fridge to firm up.  Mine was extremely dry.  Hum...might have been my homemade corn syrup.  Not sure.

I decided to add a tiny splash of milk.  Bingo!  Wonderful easy to work with consistency, not sticky at all.  After it is well blended, I separated about 1/3 into another bowl and dyed yellow for the yolk.

 I then made a bigger ball of the white, then smashed it down flat.  I wrapped the white around the yellow and tried to form it into "egg" shapes.
 The recipe I was using said she froze hers before she dipped it in chocolate, but mine were such a wonderful consistency that I didn't think that was needed.  I melted some chocolate chips in a bowl over a pot of boiling water and dipped my eggs in with a fork.  The princesses helped with this step and we were very messy!  I made a little extra chocolate and swirled it around on the top of each to make them a little prettier...but you can't really see that in the picture!
I put them in the freezer to make them harder...quicker.  'Cause I was so excited to try one.   They turned out very yummy and the princesses are already asking me to make more and these aren't even gone yet.

Prince is a picky eater, but he told his girls these are all for him. {wink}  They are really easy and quick, and if my {failing} memory serves me correctly they are pretty close to the real thing.

Wow, I'm tempted, I must say! That's a Canadian favourite too, and we can't get them in Mexico... as far as I know. ;)

What a great idea! I can only imagine how great they taste. We can get corn syrup here but it is very expensive. I will have to keep your recipe for it in case I need some!

I had no idea you could make corn syrup! Thanks for the recipe. I'll have to try it sometime as we can't get it here either. Oh, the "Cadbury" eggs look delicious.

You are amazing! I would have never even thought to make them homemade. Oh what we take for granted. I prefer the caramel eggs.
