A big hunk with Snickerdoodle Cake Recipe!

My birth-day was simple and easy.

I treated myself to a homemade Snickerdoodle Cake.  I saw this recipe on pinterest awhile back and it kept popping back in my mind.  I LOVE cinnamon flavors and scents.  Basically, anything with snickerdoodle in the title draws me like a magnet.
Snickerdoodle Cake Recipe
1. preheat oven to 325 deg fahrenheit and butter and flour 2 round pans
  (I use 9 inch but 8 inch would be just dandy)
2. Whisk together
3 cups all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 Tablespoon ground cinnamon
3.  In a separate bowl cream together  till they are nice and fluffy
2 sticks (softened) butter
1 3/4 cups fine sugar
1 cup sour cream
4.  Add  to cream mixture one-at-a-time
4 large eggs at room temperature
add
1 Tablespoon Vanilla
5.  Now you need
1 1/4 cups whole milk (room temperature) 

Don't let this confuse you, 
 add 1/3 cup of flour mixture to cream mixture....a little milk and stir....
1/3 cup of flour mixture.....a little milk and stir.....
etc, until all the flour and milk are added

Bake until a toothpick comes clean.  Mine took a little under 30 minutes.
Cool before slicing again and frosting.

I {gently} altered the cake recipe I found on this food blog.
Yes, her's looks better..I know.  But mine was de-lish!  I would have paid the big bucks to buy it in a fancy restaurant.  I'm talking $7 or $8 bucks.  It was that good.  {silly grin}

I wanted some cream cheese icing.  Since I'm the birthday girl I indulged!  I basically played around with the icing and just dumped...tasted...stirred...slurped....until it was to my satisfaction.  My wonderful (humidity proof) butter frosting recipe was my base.  Then I added a big hunk of cream cheese.  We bought it in a big long block and I've been saving it.  I added a few shakes of cinnamon and a few more cups of powdered sugar.   Yummy and a big {2 thumbs up} from the kids.  Do you hear that?  It's calling my name.  Be right back!

The princesses made me a BIG birthday card....out on the driveway.  I mixed up some sidewalk paint.  What?  You've not done that yet?  Oh, you gotta try.  It is sooo easy and really fun.  Here's how I do it.
After feeding my princesses cake and ice-cream for lunch {gasp} {whisper...."I can't believe you'd do that"}we all went for a walk on the beach.

Prince and Brynlee found some friends to visit with.  The other girls and I tried forever to catch some tiny little fishes playing hide-and-seek along the rocky edges of the water.  We never caught a single one, but we gave it our best effort.  They are fast little squirts.

There was a storm out at sea and we could see the rain and dark clouds.  Beautiful.  Before we came home though, God had painted a beautiful sunset across the Caribbean.  Special.

this cake was a huge hit at the Scout banquet we had recently, I made 3 9x13 versions with an amazing cinnamon cream cheese frosting. I didn't even get a piece! but today I am making it again for my friends birthday tomorrow and I will get my slice!

I found this recipe on Pinterest and made it for my 13 year old's birthday today. She and her friends loved it! I made them into cupcakes and they turned out well. The frosting was also super delicious. A couple of my adult friends had more than one cupcake and were raving about how moist and flavorful they were. This recipe is a keeper and I'm sure we will see it at many more birthdays and special occasions in the future! Thank you for sharing this with the world!! :-)
