Cake Batter Truffles

Cake....batter.....truffles....

Do I have your attention?
Yes, possibly some of my favorite words.  I'm kinda surprised I didn't name my daughters one of those words!  {wink}

Here is a recipe tried by me and my baby sister {gooey sweet, grin}.  It's so yummy.

Cake Batter Truffles               oh...la...la
1 cup of instant cake mix        (.....we wanted red velvet, but couldn't
                               find a cake mix for that on the Island
                               so we settled for Fun-Fetti )
1/4 cup sweetened condensed milk
1/2 teaspoon vanilla
2 cups chocolate chips
1. combine everything except chocolate chips.  Stir, stir, stir til' the sweet goodness is well mixed.  If it's too crumbly then add a touch more sweetened condensed milk.  If it's too sticky sprinkle on a little more cake mix.  You should be able to use your fingers to pinch it together into it forms little balls.  
NOTE: You can put mixture into the fridge for 15 minutes to make it more manageable.....I didn't.  I'm impatient.  Plus, mine made perfect little balls when I tried to roll them.
2. Place truffles in the fridge till froze good and hard.  Resist the urge to take them out sooner.  You'll be happy you did.  The chocolate "sticks" better when the center is frozen.  If it's too hard to wait and you can't resist the temptation....I give you permission to eat one!
3.  Slowly melt chocolat chips in your preferred method.  I do mine in a metal bowl sitting on a pot of boiling water.
4. Take your truffle centers drop into the heavenly scented chocolate and swirl around til' those lucky little things are all covered.  Gently tap off, place on parchment paper (that sounds more fancy but I actually used wax paper).
5.  Since I'm drawn to shiny objects or sprinkles I quickly tapped on a little color.
Store them in the fridge.  I'm sure you can find plenty of helpers big or small to help clean up the leftover chocolate bowl!

Oh. my. goodness. These look like something I would absolutely love!! Eating cake mix from the box with a spoon used to be my secret indulgence. Someday when I can eat dairy and gluten again, (and if I'm skinny by then, too ;), I will certainly make these. Can you see this little 80 year old lady with cake batter truffles stashed away in her freezer? Heehee.

Got another one for you! These truffles may even be easier than yours! Bake a chocolate cake. Let it cool. (You can break it up a bit into a big bowl to cool faster.) When cool enough to handle, break it up into crumbs. Add a small jar of jelly (we used raspberry). Mix thoroughly. Form little balls and put them on waxed paper. You can cool or freeze them if you want, but it's not neccessary. Now melt your chips or some almond bark and dip away. Then pop them in the frig or freezer to wait till you're ready to use them. YOU GOTTA TRY THESE! Talk about salving your chocolate cravings!!!!!!! ;)

Those look so good! When I make oreo truffles, I stick a toothpick in them right before they go into the freezer for easier dipping. Once they are dipped and the middle starts to thaw, the toothpick will slide out with the slightest twist! :)

These look yummy! I learned about Cake balls while in the states this year but these look easier...don't even have to bake the cake! ;) I have a homemade cake mix recipe that I'll have to try these with... Thanks! (You can also make sweetened condensed milk with powdered milk, sugar and water if you can't get it or too expensive.)
